Food-borne diseases

Most food-borne diseases are infections caused by a variety of bacteria, viruses, and parasites. Other diseases are poisonings caused by harmful toxins or chemicals that have contaminated food.

Commonly recognized food-borne infections are:

  • Campylobacter
  • E.coli
  • Salmonella
  • Scombroid Fish Poisoning
  • Shigella

Symptoms

  • Diarrhea
  • Vomiting, typically lasting 1 to 7 days
  • Abdominal (stomach) cramps
  • Nausea
  • Fever
  • Joint/backaches
  • Feeling extremely tired

Prevention

Proper food handling, preparation, and hand hygiene can prevent most food-borne illnesses.
